    Thumbs up Cheese Dishes

    Pao de Queijo (Cheese Puffs-Brazilian)


    Directions:


    1. Preheat oven to 400 degrees F.
    2. Bring the milk, salt, and margarine to a boil.
    3. Remove from heat.
    4. Slowly add manioc starch, stirring constantly until thoroughly mixed.
    5. Add the cheese and eggs.
    6. Knead until smooth.
    7. Form into balls approximately 2-inches in diameter and place on a greased baking sheet.
    8. Sprinkle with Parmesan cheese.
    9. Bake until golden brown.
    10. Eat while hot.
    11. Makes 20 cheese puffs.

    Cheese is extremely high in its calcium content. This is the most important thing when it comes to strong teeth. Eating certain varieties of cheese such as aged Cheddar, Swiss, Blue, Monterey Jack, Brie, Gouda, and processed American cheese immediately after a meal or as a snack has been proven to prevent tooth decay.

    Here is another great Brazilian Cheese dish -

    Cheese balls


    Ingredients:
    A. Dough:
    2 cups of home-made chicken broth
    2 tablespoons of oil
    1 teaspoon of salt
    1 dash of black pepper
    2 cups of all purpose flour

    B. Filling:

    250 g of Gouda cheese
    For coating and deep-frying:
    1 egg
    1 tablespoon of milk
    1 dash of salt and pepper
    breadcrumbs
    oil
    Preparation:
    A. Dough:
    1. Put two cups of chicken broth in a pan.
    2. Add two tablespoons of oil, a teaspoon of salt, pepper to taste and bring it to boil.
    3. Add two cups of flour and mix well with a wooden spoon until the dough is smooth and loosens from the bottom of the pan.
    4. Put the dough on a plate and let it cool down for 5-10 minutes.
    5. Take a tablespoon of dough and flatten it in your palm.
    6. Put a small piece of cheese in the middle of the dough and roll it into a ball.
    B. For coating and deep-frying:
    1. Beat an egg in a bowl and add a tablespoon of milk, a dash of salt and pepper.
    2. Put the breadcrumbs in another bowl.
    3. Dip the balls in the egg and then coat them in the breadcrumbs.
    4. Deep-fry the balls in hot oil until golden brown all over.
    5. Put the balls on a paper towel.Serve the balls immediately.

    When I was growing up and made grilled cheese sandwiches, I buttered all sides of the bread, but these days I spread little or none on the inside. I usually choose thinly sliced American cheese in these sandwiches, but thinly sliced Cheddar, Swiss, or other cheese would be wonderful. Make these with homemade bread for a real treat.

    Here is some information I acquired from the Internet. It explains some of the cheeses of Brazil - The following are Cheeses from Brazil -

    Catupiry: The most popular cheese in Brazil was developed by Italian immigrant Mario Silvestrini. It remains one of the most traditional food products in the country, and Silvestrini's original recipe is a highly guarded secret. Catupiry is a soft and mild cheese with low acidity. It is an essential component to many Brazilian recipes for chicken, fish, pasta, and pizza, and is also simply enjoyed spread atop crackers or toast. In Rio de Janeiro, Catupiry is often served with guava paste for dessert.

    Minas: This traditional cow's milk cheese is a traditional recipe from the Brazilian state of Minas Gerais. Matured in open air, Minas comes in three varieties. Frescal (fresh) is a soft, white, slightly granulated type that's served four to 10 days after production. There is also Meia-Cura (slightly matured) and Curado (mature). The aged Minas Curado takes on a more yellow hue and a more solid, granulated texture punctured with tiny eyes. With a stronger, slightly bitter taste, this Minas is excellent for cooking. It is essential to numerous Brazilian dishes, notably Pao de Queijo, the country's famous puffed cheese buns.

    Queijo Coalho: Pronounced "KAY-zhoo KWAH-lyoo," this salty cheese has a firm, but lightweight texture that is said to "squeak" to the bite. Queijo Coalho is often sold by vendors on the beaches of Rio. It's grilled to order on handheld charcoal ovens and served kebob-style with oregano and garlic sauce.

    Thanks everyone for sharing wonderful cheese recipes. Cheese has lot of benefits and i like cheese recipes. I will try these recipes soon. All posts are nice. Keep it up friends.
